As promised, I wanted to feature the dish that our friend made for the fall themed dinner. Of course because I am a terrible person I forgot to take a picture of the finished product before we ate it but hopefully the pictures (the one picture) I did take will still make you excited.
Tyler tells us about his dish:
I knew for dinner with Sam and Dan that I wanted to do some simple sautéed greens. I’ve always been interested in getting more into root vegetables and their above-ground greens, so I selected turnips at the farmers market. I supplemented this in equal proportions with an unnamed leafy green from the Chinese supermarket in Falls Church. To finish I just combined with diced garlic, salt, pepper, oil, balsamic vinegar. I’m glad it turned out well, I was a little nervous about cooking in someone else’s kitchen.
Tyler’s Greens were indeed yummy! He got us to try something that neither of us had eaten before which is always a plus in my book.
I should also mention that Tyler’s wife is no stranger to the food world and in fact she has her own food blog which you should check out – K. Chen in the Kitchen. I love her pictures from Taiwan, they make me want to hop a plane and head straight to the place making all of those yummy dumplings!
Here they are doing their thing!
As the title suggests I also made an apple pie for this dinner. I feel like I had apples hiding in every nook of the kitchen. I found a recipe for an oatmeal crumble topping that my grandmother had for another apple dish. So I decided to put together a pie using the same crumble recipe my grandmother had.
Since I had some cider left from the pork I wanted to use the cider in the pie just because I needed to have more apple flavor…right?
Ok don’t kill me, but I didn’t make my pie dough. I know, I know! You would think that someone who has a food blog would make their pie dough from scratch. Making pie dough is one of those culinary ventures I need to embrace. Until then…you’ll have to wait.
I really like pie…
So my pie came out yummy but also crumbly and to be honest I didn’t mind one bit! This would be great with a scoop of vanilla.
Ingredients
- 4 Medium Apples Peeled, Cored and Sliced
- 1/2 Cup Apple Cider
- 1/2 Cup Sugar
- 2 Tsp. Apple Pie Spice
- 1 Tsp. Lemon Juice
- 1 Pre-Made Pie Crust (I Used Pillsbury Refrigerated Dough)
- Crumble Topping:
- 1 Cup Brown Sugar
- 1/2 Cup Flour
- 1/2 Cup Oats
- 3 Tbsp. Butter
- Cinnamon (To taste)
- Nutmeg (To taste)
- Salt (dash)
Instructions
- Pre-heat oven to 375. In a large bowl combine your apples with the sugar, apple pie spice and lemon juice. In a small saucepan bring your cider to a boil and let it simmer until it reduces by half. Add your cider to your apples and toss. Line a pie pan with your crust, cut off any excess dough around the edge. Fill your pie pan with the apple mixture and set aside. In a separate bowl combine all ingredients to make your crumble topping, if needed add more butter to combine all ingredients so that it forms pebble sized crumbles. Sprinkle your topping on the pie, making sure to evenly coat the pie. Place the pie in the oven and cook until the crumble topping starts to brown. Remove from oven and cool. Serve with some vanilla ice cream and enjoy!
