Potato Keftedes

Hi Everyone! Hope you are having a great day, the hubby and I just came back from the 57th Inauguration which was an awesome sight. If you have not been to a Presidential Inauguration I highly recommend you add that to your list of things to do before you die. You don’t have to agree with the politics of every president but you have to be in awe of all that we have accomplished in our relatively short existence as a nation. I sure am glad to be here as we continue to make history!

Anyhow, enough about politics. On to the food!!

This is another recipe coming from the Hollymead collection. See Southern Spoon Bread for more background. I had to do a little research before making this dish because I honestly had no idea what potato keftedes were. It also didn’t help that my grandmother called them Kephterdes on the recipe card. So in case you don’t know Keftedes are  of Greek origin. You might be more familiar with them in their meat form. This recipe caught my eye because it was a dish from another part of the world. I think it was very forward thinking of her to serve her guests and friends foods that may have represented other cultures. I hope to show you more.

Frying Potato Keftedes

These potato balls are remarkably simple but could be altered to suit your favorite tastes or even served as is during parties and events.

  2. In Epirus, my grand would NOT make balls but rather fingers and they were my favourite as a kid
