You know what is great? When you have something that is supposed to be healthy and then add bacon to it. Bacon is like the worlds greatest condiment. It just so happens that my grandmother had a couple of recipes in her box that feature bacon in a sinfully delicious way. These green beans were one of her recipes.
Upon first glance you might think ok so this is just a dish where you put some bacon in your green beans, who hasn’t had that? That is what I thought until I realized that you are actually making a dressing with bacon. The dressing hits all the right notes, sweet, salty, sour, bacony! This dish is so yummy that it might actually have to replace the standard green bean casserole during the holidays.
I paired these with a Turkey meatloaf so that we could at least try and make other healthy choices. I suspect that you could use this dressing on a lot of vegetables. Grandma has the same dressing for Lima Beans. I think this is a great way to introduce greens to those who usually shy away. I hope you enjoy them!
Ingredients
- 1/2 Lb. Bacon Diced
- 1 Small Onion Diced
- 2 Tbsp. Flour
- 1/3 Cup Vinegar
- 1/2 Cup Water
- 3 Tbsp. Sugar
- 1/2 Tsp. Salt
- 1 Lb. Fresh Green Beans or 2 Cans Drained
Instructions
- Preheat oven to 350. Rinse your green beans and remove the ends/stems if necessary. Brown bacon in a skillet or pot. Add onions and cook until the onions get soft. Add flour and stir. Remove your pot from the heat until you are ready to add your wet ingredients. In a small bowl add your vinegar, water, sugar and salt. Stir together until your sugar and salt have dissolved. Add your vinegar mixture to your bacon and onions. Bring your pot to a boil. The bacon dressing will thicken. Place your green beans in a greased baking dish. Add your bacon dressing to the green beans, you can mix together to get the dressing fully incorporated. Bake your green beans for 30 minutes.
