I have missed you friends! I feel it has been a long time since I last posted anything. It has been a very busy time at work. So busy in fact that the husband has been cooking dinner some nights which is quite an accomplishment. I hate when life gets so crazy that I can’t get in the kitchen. The kitchen is usually my place to get away from the crazy so when I find myself getting home and wanting nothing more than to crawl into bed I feel somewhat incomplete.
I promised myself that I would get in there and do something. Lucky for me my grandmother had this recipe for chocolate rum balls. Not only do they sound entertaining they are incredibly easy to make. Not to mention that anything with alcohol in it must be delicious. These balls made me happy, they fixed that itch I had to get back in the kitchen and make something satisfying.
This recipe does not require the usage of an oven or stove. You don’t even need a major appliance! I ended up using a small food chopper to assist with crushing the Nilla wafers and the nuts but you can actually do that by hand if you wanted to.
I feel like when it comes to the Hollymead recipes I am actually starting to create these little stories in my mind. Maybe they would use these balls as a holiday treat for their guests, maybe they would come out after dinner as a complimentary end to a wonderful meal. Since there aren’t many who can fill in these stories I can’t help but come up with my own and maybe that is why making the dishes has become such a fulfilling experience for me. No matter what the story is these made me smile and I imagine they’ll do the same for you.
Ingredients
- 1 Box Nilla Wafers Crushed
- 1 Cup Nuts Chopped (I used Almonds)
- 1/4 Cup Unsweetened Cocoa Powder
- 14oz. Condensed Milk
- 1/4 Cup Dark Rum
- Confectioner Sugar
Instructions
- Combine all of your dry ingredients and stir together. Add your wet ingredients to the dry ingredients and mix well and cover and chill for about 30 minutes. When your mixture is set scoop out a teaspoon of the mixture and form into a ball. Roll the balls in the confectioner sugar to coat. Place balls in the fridge overnight, roll in confectioner sugar before serving. You can also roll the balls in shredded coconut or crushed nuts. You could also use bourbon instead of rum if desired.
