I hope everyone remembered to set their clocks ahead on Sunday. I honestly had no idea that Daylight Saving was coming until Thursday. I can’t get over the fact that its March already! Man how time flies. This past weekend was gorgeous in DC, it felt like spring was really here. I can’t really complain since we didn’t really have a rough winter to begin with. Anyhow it was a wonderful weekend.
So I wanted to make something this weekend that would help me use a bunch of bananas that were spending some quality time on my kitchen counter. I love bananas! I will eat them with chocolate, Nutella, peanut butter, honey…this list could go on. I went hunting for the perfect recipe.
I flipped through my grandma’s recipe box and found this recipe for banana muffins. I thought this would be a perfect way to utilize the bananas. I am always looking for something that isn’t the typical go to. It would have been natural for me to see the bananas and decide to just make banana bread but I thought that would be too expected. I thought this recipe was perfect and it brings me back to why I want to make my grandma’s recipes. This recipe was designed for making mini muffins (sure you can make big ones but who needs that?). I believe these were used for teas at the Inn perhaps they were served at breakfast with a little sweet butter or honey. However they were served I bet they were addicting. I couldn’t help but eat two at a time haha.
Ingredients
- 3 1/2 Cups Cake Flour
- 4 Tsp. Baking Powder
- 1/2 Tsp. Baking Soda
- 1/2 Tsp. Salt
- 2/3 Cups Sugar
- 2 Eggs
- 2/3 Cups Oil
- 2 Cups Mashed Bananas (4-6 Bananas)
Instructions
- Preheat your oven to 400. In a large bowl sift together the flour, baking powder, baking soda, salt and sugar. In a separate bowl beat the eggs and add the mashed bananas and oil. Mix the wet ingredients together. Create a well in the bowl with your dry ingredients. Pour your wet ingredients into the well. Mix everything together just until the batter is wet, do not over mix. Portion out your batter into a small muffin pan (greased or non-stick). Bake in the oven for 20 minutes or until the muffins are lightly golden brown.
You should try this with a vegan recipe!
