Here we are again with another cookie recipe. The internet is awash with cookie recipes and it makes my heart so happy.
I whipped these babies up for a cookie party hosted by one of my oldest friends. Every time you go to a party that is centered around food you always come away happy and full! There were some delicious treats on the table, lots of things I had never seen and some twists to the old standbys. What I enjoy the most is hearing everyone’s story on how they made their treat or how they couldn’t make up their mind on which cookie to bring. I have this struggle all the time.
I chose these cookies because I just love the way they look. I think they are one of the more attractive cookies out there and they taste amazing so it’s not just the looks that keep me coming back for more.
Usually these are just chocolate cookies but I had to make them more festive so I added the peppermint. It turns out that with the peppermint they kind of taste like Thin Mints. If you are a fan of Thin Mints then I know you will be a fan of these cookies. They have this amazing fudge like texture and if you aren’t careful you might eat them all before they make it out of the kitchen.
Ok, cookie talk aside, can you believe that Christmas is 9 days away?!?! Where did this month go? I am still thinking about the delicious food I ate on Thanksgiving. I went shopping this weekend for some Christmas gifts and I found myself feeling uninspired by what was in the stores. Did anyone else feel that way? I try to be creative and get people things I think they want but also has some meaning. It is getting harder and harder to buy/make things that are meaningful. I think next year I am going to bake something and send it to all of my friends, maybe I’ll send everyone pickles because I really like pickling things! I bet you really want to be on my Christmas list now dontcha?
Ingredients
- 2 Tbsp. Butter
- 4 Oz. Unsweetened Baking Chocolate Chopped
- 2 Oz. Semisweet Baking Chocolate Chopped
- 2 Cups Flour
- 1 Tsp. Baking Powder
- 1/4 Tsp. Salt
- 4 Eggs
- 2 Cups Granulated Sugar
- 1-1/2 Tsp. Peppermint Extract
- 1/2 Cup Confectioners' Sugar
Instructions
- Melt your chocolate and butter in a double boiler making sure not to burn the chocolate. If you don't own a double boiler you can take a pot and add a cup of water and bring to a boil, place a metal bowl (one bigger than your pot) on top of the pot, make sure your bowl is not touching the water, and add your chocolate and butter. Once melted remove from the heat and set aside to cool.
- In a small bowl sift your flour, baking powder, and salt. Set aside your flour. In a mixing bowl add your eggs and granulated sugar, mix on medium until combined (should be a pale yellow color). Scrape the sides of your bowl to make sure all of your sugar has been mixed in. Add your peppermint extract to the sugar and eggs and mix on low for one minute. Turn your mixer up to medium and gradually add your flour mixture, scrape the bowl to make sure all the flour is getting mixed in. Once your flour is mixed in you can add your melted chocolate, mix on medium until everything is combined. Cover your dough and refrigerate for at least 2 hours.
- Once chilled, you can remove your dough from the fridge. Preheat the oven to 325. Sift your confectioners sugar into a bowl. Scoop out your dough by rounded teaspoon and lightly roll the dough in palm of your hands to form a ball. Gently roll the ball in the confectioner sugar, making sure to tap off any excess sugar before placing on a cookie sheet lined with parchment paper. Bake 13-15 minutes or until the tops are puffed and crinkled.
- Remove the cookies from the oven and allow them to rest on the cookie sheet for a few minutes before moving to a cooling rack.
