Happy (Belated) Holidays!
I have a tendency to disappear around this time of year. I shouldn’t leave you hanging but generally what happens is I spend all of my time with family and friends and not too much time sitting at my computer. I look at it like a vacation of sorts, hopefully you understand! It is kind of nice to step away from a computer for a little bit. I think your eyes appreciate the break from the looking at screens from time to time.
Since we moved to Pittsburgh it was actually kind of strange being home the entire time for the holiday. We spent the entire day with the family on Christmas which was great but then we went back to our place and it was back to business as usual. I am used to taking the time off and driving up from DC, spending the entire weekend or week with my parents and siblings. The time would be filled with baking, movie watching and general family time. Now that we see them more often I guess we don’t have to spend the entire time with them. I was kind of sad about this change. I might want to rethink this next year…
This week we will ring in the new year. Can you believe it is 2015 already? I can’t really believe how quickly the time has passed. I am excited to ring in the new year but I have to admit that I hate planning New Years activities. This is the one holiday that I build up in my mind and it never ever lives up to what I envision. I also want to dress up in a fancy dress and look like I just stepped out of the 1920’s, I love the vision of sparkle and glamour. I envision an evening filled with champagne and music. I can tell you right now that it has never looked like that. Last year, I was a big baby and made everyone go home early to watch the final countdown on TV. This year I promise to be better.
If you are having a party this New Year’s Eve or New Year’s Day, you might want to consider making these delicious wings. I have a hard time turning down wings, they are so delicious and small, I think your guests would have a hard time turning them down as well. I marinated these wings overnight and then baked them in the oven. They are a great appetizer for parties or football games. With the playoffs right around the corner you should definitely consider holding on to this recipe.
Ingredients
- Marinade:
- 1 Tsp. Sesame Oil
- 3 Tbsp. Low Sodium Soy Sauce
- 1 Tsp. Worcestershire Sauce
- 1 Tsp. Ponzu or Lime Juice
- 1 Tbsp. Grated Fresh Ginger
- 1 Tsp. Brown Sugar
- 1/2 Tsp. Pepper
- 1 1/2 Tsp. Sriracha or Sambal Chili Paste
For the Sauce:
- 1 Tbsp Brown Sugar
- 1/4 Cup Orange Juice
- 2 Tbsp. Low Sodium Soy Sauce
- 1 1/2 Tbsp. Sriracha or Sambal Chili Paste
- 1 Tsp. Grated Fresh Ginger
- Sesame Seeds for Garnish (Optional)
Instructions
- Combine all marinade ingredients together in a larger plastic ziploc bag. Add the chicken wings to the bag and shake to cover the chicken wings. Place the bag in the fridge and marinate for 2 hours or overnight. To evenly marinate make sure chicken is covered in marinade (laying the bag on it's side might be best).
- Preheat oven to 375 degrees. Line a cookie tray with aluminum foil and baking rack. Spray the baking rack with non-stick cooking spray. Place the marinated chicken wings on the baking rack and bake in the oven for 15 minutes. Check chicken to see that it is not burning, if using the whole wing check the tips to ensure they are not browning too quickly. Place wings back in the oven and bake until golden brown, 5-10 minutes longer.
- While chicken wings are cooking add all of the sauce ingredients in a small saucepan and heat until it begins to simmer.Taste sauce to determine if more heat is desired. Once wings are cooked apply the sauce using a pastry brush to each wing. Place the coated wings back in the oven for an additional 5-10 minutes to allow the glaze to set. Garnish wings with sesame seeds and serve.
