It’s time to pretend that my New Year’s Resolution was to be healthy…
I know better than to make resolutions revolving around my diet. I do my best to try and make healthy decisions all year long and every year. There are times that I cheat; I mean you already know that I do. I just don’t support the idea that only at the beginning of the year should you decide to eat healthy. I can’t fathom eating nothing but salads in the month of January. Guys, it is freezing outside! How can you live off of salads and smoothies when you are facing negative degrees? I need spice and heat. I need filling and delicious.
I would tell you that this chili is perfect for watching the playoffs but the Steelers are already out so I can’t say that I care very much. I’ll watch the Superbowl only because of the connection to food this year since there will most likely be two teams playing that I have very little interest in. The hubby supports the Dallas Cowboys so even he has given up.
I think if you serve this to the manliest of men they will enjoy it just as much as they enjoy the version full of meat. I mean, if you have to make it more appetizing to the carnivore in your life you could pour a can of (light) beer in there. Instant manly meal!
Can I take a second to tell you that I feel in need of a personal assistant at times. Some people tell me that I have a hard time saying no to things. This might be true but in my mind there is no problem with taking on things that can challenge you and also help you to grow. The problem is that if I don’t have someone keeping me in line I might get distracted by tv marathons or browsing stores with no idea what I am looking for. Is there an assistant who can help me to not fall in to these tempting traps?
While you ponder my need for an assistant I will just end by saying I am totally supporting this veggie chili because it is delicious but if you must have meat then you need to make the famous Steel City Chili. Ingredients
- 1/2 White Onion Diced
- 1 Poblano Pepper Seeded and Diced
- 1 Can (15oz) Diced Tomatoes (No Salt Added)
- 1 Can (15oz) Pinto Beans Rinsed and Drained
- 1 Can (15oz) Black Beans Rinsed and Drained
- 1 Can (15oz) Kidney Beans Rinsed and Drained
- 1 Cup Low Sodium Chicken or Vegetable Stock
- 2 Tsp. Diced Chipotle Peppers in Adobo
- 1 Pkg. Chili Seasoning Mix (i.e. McCormick Seasonings)
- 1 Tbsp. Vegetable Oil
Instructions
- Heat a large pot over medium heat. Add vegetable oil to pan along with the onions and peppers and saute until onions and peppers start to brown, careful not to burn. Add diced tomatoes with juice followed by beans, stock, chipotle peppers and chili seasoning. Stir to combine and bring to a boil. Reduce heat and cover, allow chili to simmer for 30 minutes stirring occasionally to make sure it does not burn. Serve with your favorite chili toppings.
