It’s almost Super Bowl time!
How are you feeling about this year’s matchup? Since the Steelers aren’t playing I can honestly say that I am not leaning one way or the other. Generally, I feel that whoever beats your team should go on to win the whole thing. This makes me feel like our losing was justified; you lost to the best team. I am going to guess that many of you out there disagree. Maybe we should change the subject…
I really like sandwiches. I am sure you really like sandwiches too. Whenever I meet someone who tells me they don’t like sandwiches I am always really baffled. How is it possible? A sandwich consists of everything I love, bread, meat, cheese (most of the time). It’s the perfect way to enjoy my favorite things. I even like vegetarian sandwiches. Give me hummus, cucumbers, and feta any day! Whenever I want to have fun with our dinner plans I usually decide to make some type of sandwich. I think it encourages creativity. Convincing the hubby that a sandwich will suffice for dinner is hard work, I really have construct an impressive sandwich. I am not suggesting that I am the sandwich queen over here. I am far from the master of sandwich making. Let’s just say that I enjoy making them.
I also really enjoy making mini sandwiches. I think if you asked anyone in my family they would tell you that I almost always suggest making sliders out of anything. Oh you want crab cakes? How about crab cake sliders? Oh, did you need to feed 100 people? Maybe you should consider making sliders. I know myself well. I am obsessed with mini things. I don’t want a full size anything, give a mini version and I’ll be as happy as can be. If you every come to my house for a party you should expect a mini sandwich waiting for you. If for some reason there isn’t you have my permission to walk in demanding it.
For this Super Bowl you might find yourself entertaining a group of hungry football fans. Since it is also likely to be cold outside you might want to prepare something filling; something with a little spice even. Maybe you want to impress your friends with a slider the size of their face… ok, it is not that big. I think you will enjoy these sliders and I am willing to bet your friends will too. Teriyaki Turkey Meatball Sliders
Notes
Feel free to turn up the heat by adding more sriracha or red pepper flakes. You can also bake the meatballs for 2-3 minutes after applying the glaze, this will help the glaze to set.
Ingredients
- 1 Pkg. Ground Turkey
- 2 Green Onion Stalks Diced
- 1/2 Tsp. Lime Juice
- 2 Tbsp. Soy Sauce
- 1/2 Tsp. Red Pepper Flakes
- 2 Cloves Garlic Minced
- 1/4 Tsp. Ground Ginger
- 1/2 Cup Panko Bread Crumbs
- 1 Tsp. Sriracha
- Salt and Pepper
- Teriyaki Glaze
- Slider Buns (toasted)
For Teriyaki Glaze
- 1/4 Cup Teriyaki Sauce (I used Kikoman)
- 1/2 Tsp. Red Pepper Flakes
- 1/2 Tsp. Sriracha
For Cucumber Salad
- 1 Cup Cucumber Sliced
- 1/4 Red Onion Sliced
- 2 Tbsp. Rice Vinegar
- 1 Tsp. Soy Sauce
- 1/2 Tsp. White Pepper
- 1 Tsp. Sesame Seeds
Instructions
- Preheat oven to 375. Place ground turkey in a bowl and add all ingredients except for the Teriyaki sauce. Using your hands, mix everything together until combined. Using an ice cream scooper, scoop the turkey in to balls. Form balls with hands if needed and place finished balls on a baking sheet lined with parchment paper.
- You may choose to bake the meatballs from start to finish but you can also brown them in a pan before baking. I browned the meatballs in a pan over medium heat with a little bit of vegetable oil before baking in the oven.
- Bake until done, meatballs should register 165. Remove meatballs from the oven and prepare teriyaki sauce. Assemble sliders after applying Teriyaki glaze and cucumber salad (see below).
Teriyaki Sauce
- Combine all ingredients in a small saucepan and heat until simmering.
- Remove sauce from heat and brush on top of meatballs.
- Allow to cool before applying a second coat, repeat if desired.
Cucumber Salad
- Combine all ingredients in a small glass bowl. Cover with a lid and shake gently to distribute all ingredients.
- Refrigerate until ready for use.
