It’s been a minute (a long minute) since I last posted something, for that, I apologize. I have lots of very good excuses but I am sure you don’t really care to hear any of them. The important thing is I am back and I am bringing you delicious food once again! I have a Stitch Fix review coming soon as well so you probably want to come back for that (October was a fun box!).
I am really struggling with the idea that Thanksgiving is just around the corner and that means we are almost in 2018. I should have known that 2017 was going to zip right by. One of the reasons I have been MIA is because I started a new job in October. I wasn’t actively looking but this was an opportunity that I couldn’t pass up so I applied and the rest is, you know, history. It’s been a pretty exciting time but I am still learning the ropes and getting adjusted to my new surroundings.
The best parts of fall seem to be happening in an instant. The weather was too warm to see the leaves change over time so with one cold front we had bright leaves all over the place, and all over the ground. It was kind of anti-climatic. We even had a few snow showers already so I think we skipped right over fall and are now in winter, yeesh!
Since I know you are still enjoying some of the best fall has to offer, like Sunday football, I wanted to bring you a snack that is sure to delight any of your football watching friends and family. It seems like Pittsburgh is a big place for buffalo chicken, we put it on our salads and dips. We put it in wraps and I guess now, we put it on nachos! I can basically eat anything with buffalo chicken on it and probably have. I also love nachos, I mean, who doesn’t? Actually, my husband is kind of indifferent on nachos which I constantly remind him is absurd. These nachos are extremely easy to make and you can honestly add any toppings you’d like. I tried to keep it pretty true to your standard buffalo chicken combo but I did add a few extra toppings.

Ingredients
- 1 Pkg. Chicken Tenders Diced
- 1/2 Cup Frank's Red Hot Sauce
- 3 Tbsp. Unsalted Butter
- 1/3 Cup Cheese Curds
- 1/4 Cup Blue Cheese Crumbles
- 1/2 Cup Shredded Mild Cheddar Cheese
- 1/4 Cup Diced Celery
- 1/4 Cup Sliced Black Olives
- Salt and Pepper
- Ranch Dressing or Blue Cheese Dressing
- Tortilla Chips
Instructions
- Preheat oven to 375.
- Line a baking sheet with foil and spray with non-stick cooking spray.
- Spread tortilla chips on baking sheet and set aside.
- Heat a skillet over medium heat and add chicken tenders. Season with salt and pepper.
- Cook chicken until done, add hot sauce and butter to pan and allow sauce to simmer.
- Place chips in the oven and bake for 10 minutes or until chips start to turn golden.
- Remove chips from oven and top with all the cheeses and chicken.
- Bake nachos in oven for 15 minutes or until cheese is melted.
- Remove nachos from oven and top with remaining ingredients.
- Drizzle with ranch dressing and a bit more Frank's Red Hot if desired.
