If you have a chocolate lover in your family then I have just the thing!
We celebrate a lot of birthdays between July and September and that comes with a variety of opinions on the type of cakes or treats we have when it’s time to celebrate. I am not actually much of a cake person, cupcake, yes! If you think about it, it really doesn’t make much sense but I think it has more to do with the proportions of cake to icing. Some of you know what I am saying!
This recipe was shared with me by my husband’s Nana. This is the cake that she would make for his birthday and given his love of chocolate I wasn’t at all surprised to see that is was mostly made of chocolate! I would have probably swirled in a bit of peanut butter but for some reason he doesn’t believe PB and Chocolate go together…he’s bananas right?!?!
You might have noticed this is a newer version of a previous post. I wanted to make this cake in the way that my husband was used to having it. Especially given that I was making it as a belated birthday treat for him, wife of the year right here!
This cake is incredibly easy to make and something you could probably do with a little one or two. I didn’t put icing on because it really doesn’t need any. A good dusting of powder sugar or a dollop of whipped cream will do the trick. If you have a chocolate lover in your life they will not be disappointed even if they find themselves blowing out more candles than they would like to count.
Triple Chocolate Birthday Cake
Ingredients
- 1 Pkg. Dark Chocolate Fudge Cake Mix
- 3 Oz. Chocolate Fudge Instant Pudding
- 4 Eggs
- 1/2 Cup Cooking Oil (Canola or Peanut)
- 1 Cup Sour Cream
- 1/2 Tsp. Instant Coffee
- 1/2 Cup Water
- 12 Oz. Chocolate Chip (semi-sweet or bittersweet)
Instructions
- Preheat oven to 350 degrees.
- Prep bundt pan to ensure the cake does not stick – you can use butter and flour or pam baking spray.
- Dissolve the instant coffee in the water and set aside.
- In a medium bowl combine all other ingredients, omitting the chocolate chips. Whisk or stir to combine until the batter is smooth and well blended.
- Add the coffee, stir to combine.
- Fold in the chocolate chips.
- Bake in a bundt pan for 1 hour or until baked through, test by inserting toothpick which should come out clean when done.
